Monster Cookies

These spookily delicious cookies went so well with our Monsters Inc. themed day. Making them extra large can make them extra special, too.

Ingredients:

  • 1 3/4 C peanut butter
  • 1/2 C butter, softened
  • 1/2 C sugar
  • 1.5 C brown sugar
  • 3 eggs
  • 2 tsp vanilla
  • 4.5 C oats (I have used old fashioned & quick oats, both work)
  • 2 tsp baking soda
  • 2/3 C M&Ms
  • 2/3 C Pretzels, mashed into pieces
  • 1/3 C semi sweet chocolate chips
  • 1/3 C graham cracker crumbs
  • Candy eyes, for placing

* We used what we had in the house to make these cookies over-the-top. Using 1 C M&Ms and 1 C chocolate chips, or whatever your choices might be, works just as well! Use what you have in the house. Get creative!

Directions:

  • Preheat your oven to 350 and line a baking sheet with parchment paper
  • In a large bowl, combine: peanut butter, butter, brown sugar, and sugar. Stir until nice and smooth.
  • Add eggs and vanilla; stir some more.
  • Add the oats and baking soda. Make sure it is very well mixed so the baking soda is evenly spread.
  • Mix in your extras (m&ms, chocolate chips, pretzels, etc.).
  • Place as many candy eyes on the cookies as you like. Snuggle them into the dough ever so slightly so they stay, but don’t melt into the cookies.
  • Use a medium cookie scoop and put these babies on your baking sheet. If you want to make them MONSTER big, use anything from 1/4 C to 1/2 C measuring cup. Only place 3-6 of these on your cookie sheet, depending on size.
  • Bake for 12 minutes, then press them down slightly with a fork or spoon. Beware not to push on the candy eyes! Then bake for another 5-6 minutes.
  • Let cool on your tray for five minutes before transferring to a cooling rack.
