
Who loves tamales? If you raised your hand, you’re with me. However, I cannot for the life of me cook good tamales. Something always goes wrong. These tamale muffins, however? These I can do, which is why I chose them for our Coco Disney Day. Even if they’re not as authentic.
Ingredients:
- 2 boxes Jiffy corn muffin mix
- 3/4 C frozen corn
- 1 C Sour Cream
- 1/4 C Melted Butter
- 2 large eggs
- 1/2 Beef
- 1/2 tsp cumin
- 1/4 tsp chili powder
- 3 cloves garlic, minced
- 1/4 tsp onion powder
- Mexican Shredded Cheese
- Red Enchilada Sauce
- Cialntro, for serving, if desired

Directions:
- Preheat your oven to 400.
- Mix together your cornbread base by combining: corn muffin mix, corn, sour cream, butter, and eggs. Whisk until evenly combined (no dry spots).
- Lightly spray your muffin tin and use a medium cookie/ice cream scoop to put batter in cups. Bake for 15 minutes.
- While they’re cooking, brown your hamburger and add your spices.

- Use a shot glass to push down in the middle (kind of like we did for the Up Cookie Cups) to make them cups.

- Let cool in pan for five minutes or so. Then top with your ground beef, about a teaspoon to tablespoon of red enchilada sauce, and as much cheese as desired.
- Broil Cups for five minutes or less, until the cheese begins to brown. Top with cilantro if desired!
