As we dive into the summer months, I’m more and more excited for the Disney Days we have scheduled.
Our Meet The Robinsons day started with making some delicious PB&J cookies.
Lewis’ first invention that we see is him trying to make the perfect peanut butter and jelly sandwich, so we opted for a special cookie.
While we didn’t find the *perfect* balance of peanut butter and jelly, they were absolutely delicious!
After we watched the movie with our cookies, we talked about inventing and failure, together and on their own. We celebrated failures and talked about what we would make if we were to invent something. I was pretty impressed with my dragons’ imaginations….
In the end, our favorite thing to do is KEEP MOVING FORWARD!
I didn’t grow up with peanut butter and jelly. Plain peanut butter? Sure. But I was convinced I didn’t like peanut butter and jelly because no one else in my house really ate it.
Fast forward to college and eloping with my husband (oh, yes, we did)- we lived off of pb&j for the first few years. Nowadays I don’t eat it as much, but it’s genuinely something I will crave now and again.
Out of my dragons, the only one who really eats it is my oldest. However, all three of them gobbled up these cookies. That has to mean something, right?
Lewis in Meet the Robinsons makes an invention that creates the perfect balance of peanut butter and jelly, so we decided to chase that dream… in a cookie.
Peanut Butter & Jelly Cookies
– 1 C peanut butter
– 1/2 C softened butter
– 1/4 C Sugar
– 3/4 C brown sugar
– 1 egg
– 2 tsp vanilla extract
– 1 tsp baking soda
– 1/2 tsp salt
– 1.5 C unbleached all purpose flour
– 1/2 peanut butter chips (we used Reese’s)
– Jelly (pick your favorite! We used raspberry preserves)
– Preheat your oven to 350 and line a baking sheet with parchment paper or spray with baking oil.
– Mix together your butter and peanut butter. Then add in your sugars.
– Mix in your egg, vanilla extract, baking soda, and salt.
– Mix in your flour on a low setting. Then stir in your peanut butter chips.
– Next, using a medium cookie scoop (or around 2TBSP), put 9-12 cookies on your cookie sheet. Use the bottom of a measuring cup to slightly flatten them.
– Use a measuring spoon or something similar to make a small crater in the middle of your bow slightly-flattened-cookies (see picture).
– Put 1/2tsp to 3/4 tsp of your favorite jelly in the crater. (We erred in the side of caution and only did 1/4-1/2tsp in our first batch and it definitely wasn’t enough jelly.)
THEN you’re going to use your cookie scoop (or 1-2TBSP) and top off your cookie so the jelly is hidden in the middle. Use extra peanut butter chips on top if desired.
– Bake for 12 minutes and let sit on cookie sheet (once removed from oven) for another five before transferring to a cooling rack.
